  • Talkin' with Big T-- An Irreplaceable Chat with My Father
    Oct 7 2026

Happy 2-Year Anniversary to the Peace of Wellness Podcast!!

Naturally, after the smashing success of interviewing Kirsten’s mother, the Peace of Wellness Podcast was destined to feature a conversation with her father, Tom—better known as “Big T.”

The oldest of two boys, Tom was born and raised in Kearney, Nebraska, where he followed in his father’s footsteps and became a corn and soybean farmer. He also raises beef cattle, partly as a hobby and partly to provide his family with their entire year’s supply of beef, year after year (lucky us!!).

Tom graduated from the University of Nebraska–Lincoln with a degree in economics. In his younger years, he was the quarterback of his flag football team and captain of his basketball team—until a torn ACL put an end to his intramural sports career.

A lifelong traveler at heart, Tom has visited all 48 contiguous states, many of them by car. He passed that love of road trips on to his kids, taking them on adventures all across North America—from Yellowstone to Banff, Chicago to the California Redwoods, and plenty of places in between.

But perhaps his greatest accomplishment has nothing to do with farming, traveling, or sports. He’s simply been the best father Kirsten could have ever asked for—and this conversation is a chance to celebrate the man behind the title of “Pops.”

Krit Sempolkrung, a UNLV alumnus, brings over 14 years of experience in high-end catering, having served A-list celebrities like Beyoncé and Taylor Swift, and led large-scale events for major organizations like Microsoft, Adobe, and the Las Vegas Raiders. He is recognized for his entrepreneurial leadership as the founder of Secret Creamery, as well as his ability to build strong teams, deliver exceptional experiences, and drive growth within the hospitality industry.

Jarrett Applewhite is a father, husband, serial entrepreneur and the founder & CEO of Cootoh, a tech-enabled private chef company based in Las Vegas serving hosts and chefs nationwide. He's a big believer that creating, staying curious and conversation are key to living a great life and staying young. Outside of work it's all about collecting memories with his wife, son and their tribe. He will also die on the hill that mint-chocolate-anything should be illegal, and that pineapple has no business on a pizza - it's a texture thing.
