We were joined by Four Seasons Vail Executive Chef Simon Purvis and Chef Mackenzie Nicholson, the executive chef at Beano's Cabin at Beaver Creek Resort.

    Welcome to the West of 105 Podcast, a podcast that looks at all aspects of lifestyle in Colorado West of the 105th Meridian. We're kicking the West of 105 Podcast off with a mini series of episodes that look at the arrival of the Michelin Guide in Colorado. Next week on September 12th, the inaugural Michelin Guide to Colorado will be fully announced and stars bestowed at a ceremony where the glitterati of the Colorado culinary world will come together.


    The inaugural guide covers four regions of Colorado, Aspen, Snowmass, Vail, and Beaver Creek Resort, Boulder, and Denver. And so in the buildup to the release, we spoke to chefs from each of the regions to get a feel for those areas, the chefs and their restaurants, and of course, their thoughts on the Michelin guide. Today we're in Aspen at the Little Nell.
