Two Awesome People is a weekly podcast-style show hosted by Kelly and Don, exploring trending topics, personality debates, and the weird stuff the internet keeps finding.
🍪 Buttered toast cookies Recipe:
Toast Flakes:
3 slices toasted sourdough bread
1Tbl unsalted butter
Wet
3 1/2 T unsalted, cubed, cold butter
6 T unsalted butter, browned
1 tsp white miso paste (optional)
3/4 C. sugar
1/4 C. brown sugar
1 egg & 1 yolk
1tsp vanilla
Dry
2 C. all purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 C raspberry jam to swirl into the dough
1 C. White Chocolate Chips/Chunks (optional)
Pulse toasted and butter bread in food processor. Set aside 2/3 of the Toast Flakes for the dough and 1/3 to coat the outside of cookies before baking.
Brown the butter is a small saucepan and then remove from heat and cool for 30 minutes
- Mix the cubed butter with cooled browned butter, miso paste, sugar, and brown sugar. Mix until creamy.
- Mix in the egg, egg yolk, and vanilla.
- Add dry ingredients into wet mixture. Do not overmix
- Fold in 1/2 the toast flakes you set aside earlier
- Marble in the jam (don’t mix in)
- Portion the dough into 1/2 C. balls, roll each dough ball in the remaining toast flake.
Place cookies onto a parchment lined tray and refrigerate for at least 1 hour, up to 30 hour
Preheat oven to 375 degrees and bake for 10-12 minutes. You should have visible browning. Allow to cool on the tray for 5-10 minutes.
