  • Words Matter! Nutrition Labels, Toxicology, and Your Health
    Feb 26 2024
Words matter. This is particularly evident when we go to the grocery store and see words like, “natural,” “organic,” and more. These words mean something, and they don’t mean other things. It is important for us to be aware of these words, especially when it comes to talking about things that we take into our body.In this episode, Dr. Michael Smith interviews Dr. Kayla Preece, a naturopathic doctor with a background in regulatory affairs and toxicology. They discuss the role of naturopathic medicine in the regulatory landscape, specifically in the assessment of the safety of food ingredients and dietary supplements. Dr. Preece explains the concept of Generally Recognized as Safe (GRAS) and how it is applied in the United States. She also sheds light on the challenges and complexities of regulatory compliance and the importance of understanding the science behind ingredient safety. The conversation highlights the need for clear definitions of terms like "healthy" and "natural" in food labeling and the impact of regulatory decisions on public health.Key Takeaways:* The regulatory landscape for food ingredients and dietary supplements is complex and constantly evolving. Understanding the science behind ingredient safety is crucial for regulatory compliance.* Generally Recognized as Safe (GRAS) is a designation for food ingredients that have been deemed safe based on scientific evidence and expert consensus. The GRAS process involves assessing the composition, manufacturing, and intended use of an ingredient.* The definition of terms like "healthy" and "natural" in food labeling is not well-defined, leading to confusion and potential deception. Clear regulations and standards are needed to protect consumers.* Frozen fruits and vegetables can be a convenient and nutritious option, as freezing helps preserve their nutrients. It is important to focus on simple, whole foods and not be overly fearful of food choices.* The regulatory landscape differs between countries, with varying requirements and standards for ingredient safety. Harmonization of regulations and international collaboration are important for global food safety.-------A naturopathic doctor and toxicologist, Kayla Preece, ND, DABT weaves both disciplines in helping companies (and, indirectly, consumers) bring food and supplement products to the market that are safe and not going to cause any major problems. Dr. Preece completed her naturopathic medical education at the National University of Natural Medicine (NUNM) in Portland, OR. She is also a Diplomate of the American Board of Toxicology and holds many credentials with the Regulatory Affars Professional Society (RAPS). After working in a naturopathic clinic setting, she transitioned her career into the area of regulatory affairs, specifically for food and supplement ingredients that are Generally Recognized as Safe, or GRAS. This is a special regulatory pathway that allows food and supplement manufacturers to bring these ingredients to market. She currently lives in California and enjoys hiking and skiing. • Kombucha, Sauerkraut, and More
    Feb 1 2024
Fermented foods have been around for millennia, but why are they used? How do fermented foods get, well, fermented? And most importantly, why would someone want to eat fermented foods as part of their diet? This “sauer” presentation, Dr. Michael Smith, NMD explores the fermentable foods that we know and love, including kombucha, sauerkraut, kefir, kimchi, and more. He discusses how they are made, how they influence the body when consumed, and when fermentable foods may or may not be desired.Ultimately, the art of fermentation embraces the idea of community – on so many levels. By weaving more fermented foods into our diet, we can not only reap many health benefits from them but nurture the community in and around us.0:00 Introduction4:21 What is a ferment?12:38 Why ferment foods?19:51 An International Tradition20:31 Health Benefits of Ferments25:03 Fermented Grains and Breads28:15 Fermented Dairy32:11 Fermented Beverages34:49 Fermented Vegetables38:39 Homemade Sauerkraut44:50 When would you NOT want to eat fermented foods?47:45 Sharing and CommunityAmazing books about fermented foods that you should check out!(Note: As an Amazon Associate, I earn from qualifying purchases.)Start with these three:- Our Fermented Lives, A History: How Fermented Foods Have Shaped Cultures & Communities, by Julia Skinner, 2022 https://amzn.to/3UcwQAw- The Art of Fermentation: An In-Depth Exploration of Essential Concepts and Processes from Around the World, Sandor Ellix Katz, 2012 https://amzn.to/49b5Khj- Fermented Foods for Health: Use the Power of Probiotic Foods to Improve Your Digestion, Strengthen Your Immunity, and Prevent Illness, by Deirdre Rawlings, PhD, ND, 2013 https://amzn.to/3SAITGHThese others are great references as well:- The Self-Sufficient Kitchen Series: Fermenting: Pickles, Kimchi, Kefir, Kombucha, Sourdough, Yogurt, Cheese, and More!, by Wardee Harmon, 2021 https://amzn.to/42dfoxL- Ferment Your Vegetables: A Fun and Flavorful Guide to Making Your Own Pickles, Kimchi, Kraut, and More, by Amanda Feifer, 2015 https://amzn.to/48R8vEN- Asian Pickles at Home: 75 Easy Recipes for Quick, Fermented, and Canned Pickles, by Patricia Tanumihardja, 2020 https://amzn.to/3Uh4Co4- The Complete Idiot's Guide to Fermenting Foods: Making your own delicious, cultured foods--safely and easily, by Wardeh Harmon, 2012 https://amzn.to/3vWpx64- True Brews: How to Craft Fermented Cider, Beer, Wine, Sake, Soda, Mead, Kefir, and Kombucha at Home, by Emma Christensen, 2013 https://amzn.to/49allh9- Wild Fermentation: The Flavor, Nutrition, and Craft of Live-Culture Foods, by Sandor Ellix Katz, 2003 https://amzn.to/3ucDxIk- The Mini Farming Guide to Fermenting: Self-Sufficiency from Beer and Cheese to Wine and Vinegar, by Brett L.
